Pancakes – Sunday Morning staple. Easy, delicious, normal! For my little brother, this is his number-one seller – it has to look and taste like ‘normal’. I promise these are super tasty and take 3 minutes!
Serves 1
INGREDIENTS
- ¼ cup almond meal (ground almond, blitz them in a food processor or in a thermie)
- 1 egg
YES, THAT’S IT – if you want to make more, add one egg for every ¼ cup almond meal
METHOD
Combine egg and almond meal in a bowl
Melt butter or coconut oil in a pain in a pan over a low-medium heat
Scoop mixture into pan – a few mini ones, or one or two big pancakes.
Flip when they can slide around on the pan/cooked on the bottom. .

VARIATIONS – the best thing about this recipe is how many versions you can make!
- Chocolate chip: we get dark chocolate chips in a big bag from Costco which I add to the mixture. This makes them a sweet treat, which can be had for afternoon tea as well (every once in a while!)
- Bacon and Maple Syrup: while cooking the pancakes, cook bacon in the same pan and drizzle with Pure Maple Syrup or Rice Malt Syrup
- Berries and Yoghurt: while the pancakes are cooking, you can combine a range of berries (strawberries are recommended) in a bowl with a drizzle of Maple Syrup and roughly chopped mint leaves. This can top the pancakes, along with your choice of yoghurt, or whipped cream.
